Apple and blueberry pie with cranberries

  • 250 g flour
  • 125 g butter
  • an egg
  • 100 g powdered sugar
  • 4 g baking powder
  • organic lemon zest
  • a pinch of salt
  • 23 apples ( golden delicious)
  • 100 g blueberries
  • 30 g dried cranberries


  1. In a bowl, mix the butter, the powdered sugar and grated lemon zest.
  2. Add the egg, a pinch of salt and mix well.
  3. Add the flour mixed with baking powder. Stir until all ingredients combined.
  4. Form a ball, wrap up and place in the freezer for 30 minutes.
  5. Peel and cut apples into cubes. Sprinkle with caster sugar and drizzle with lemon juice.
  6. Wash and drain blueberries. Soak dry cranberries for some minutes in hot water, drain.
  7. Roll out the dough and place in the baking sheet lined with parchment paper. Distribute apple cubes, blueberries and drained cranberries over the dough.
  8. Bake the cake for about 30 minutes, until the dough golden brown.
  9. Let it cool for some minutes and sprinkle with icing sugar before to serve.
